Sour-Creamy Super-Cheesy Enchilada Goodness


This "recipe" got 4 thumbs up in our house (I am sure Skylar had her thumbs up and the dogs would have raised their thumbs (do dogs have thumbs?) if we had shared...)

I use the term recipe very loosely - because I didnt measure anything - except sort of the chicken broth....

CLEARLY - you could season and cook your own chicken -- but since this is the first chicken I have "cooked" with or could even stomach THINKING about touching to cut up since the Bean took up residence in my belly, I figured paying a little more for the fully cooked version was worth being able to eat the final product. Plus, let's be honest -its just way way easier. (Thankfully, I must give full credit to Nate - who took the chicken off the bones for me too - what a great man. :) )

Ingredients:
Rotisserie Chicken
Cheese (Sharp Cheddar & Monterey Jack)
Onion
Salsa (Optional)
Tortillas
Chicken Broth (1 can - 16 oz.ish)
Flour (1/4 ish cup)
Butter (1/4 ish cup) + enough to sauté onions
Sour Cream

Sautee Onion in light butter until clear & soft Add diced chicken to onions Fill each tortilla (I used 7 or 8) with chicken/onion mixture - grated cheese and salsa (or no salsa) Roll and leave seam side down in 9*13 inch pan

In pan melt butter - mix in flour until bubbly (gravy-ish) Add in chicken broth gradually - stirring until it boils and thickens (just a bit) Remove from heat Add sour cream and mix until creamy and smooth (at least 8 oz - I used 2/3 of a container) Cover tortillas with creamy mixture (the mixture will be like a runny-ish gravy/melted ice-cream consistency) Top with cheese & more cheese & a little more - cause it's better that way.
Bake at 400 for 20 minutes

Let sit for 10 minutes or so before serving.

We only used salsa in half of them - and we ended up not even adding any salsa as a "topping" afterwards because it was just so creamy and cheesy - my mouth is watering just thinking about it. If you want more of a kick though, I think some diced jalapenos or salsa in the sauce before you bake would be delish.

Less than 10 weeks!! eeekkk!!

No. It cannot be that close already. While on some days I am ready for her to be here -- some days I am definitely not. Today is a "not ready" day. I do feel myself slowly starting to swell... like really swell....like my nose is 4 times bigger today than it was yesterday...is that even possible? yuck. These are the little things that I know do not matter...and they will all be worth it when she gets here...but I would totally be okay with having a normal sized sniffer until she gets here. I mean - I am pregnant. I am not gonzo. Or....am I?

I am ready for her bedding to get here so I can update the nursery....oh wait - she needs a mattress stil so that I can put the bedding IN the bed! :)

Meet Skylar

So, this time she did a little better - could have been that mama was starving....or the Mt. Dew. :) We still didnt get a good full face shot - but we did see her little nose and sweet little lips! She kept her fingers and hands by her face or in/near her mouth the entire time. :)

Can't wait to see this sweet girl in the FLESH! :)

Weekend Happenings

Has another week already come and gone?

Last weekend we had a FULL weekend planned - I think the thing I was MOST looking forward to - was seeing Skylar again in 3D!

Unfortunantly - the little booger is stubborn - just like her mama daddy. She was completely content to leave her back to the camera - no matter what we did to try to get her to roll over. Apparently - regardless of the fact that we scheduled the appointment during her most active time of the day - she decided it was nap time as soon as we pulled into our parking spot at Sneak Peak Studios. We were able to see her BEAUTIFUL backbone....her little butt - we confirmed she was a girl - twice - (this has, thankfully, made the dreams I have been having that she comes out and the Dr. says "It's a Boy!" go away!) and we saw the back of her head - which is covered in hair. (This might explain the heartburn if you believe the old wives tales about pregnancy?! However, it could all fall out before she gets here too.)

Anyway - we ended up going to lunch at Al's Pizza (delish) and then running errands the rest of the day on Saturday.

Sunday was Skylar's First Shower - hosted by Nate's mom and grandma. So sweet. The cake was delicious! The decorations were adorable - and Skylar received a TON of awesome things from all of her aunts, adopted grandmas and great grandmas! This will be one spoiled little girl! That is for sure!

I didn't get very many pictures - but here are a few! I think it is pretty safe to say, this little girl is L.O.V.E.D. Can't wait to see her sweet face!! (Which, *hopefully*, will be this weekend at our SECOND attempt to have another ultrasound -- the little rascal MIGHT just get a Mt. Dew for breakfast so she can't HELP but dance around for the camera!)

Waiting for Skylar-Bug!

This is going to be her little (obviously this term is used loosely) guard dog. I just know it. Her B.F.F.

Because he KNOWS something is up.
He will NOT leave my side.
And he randomly goes into her room that is barely set up, and just lays in the middle of the floor and sighs.

What a sweet face.

That other dog we have, you know, Nate's dog.....she could give a flyin' flip about what is about to happen. Little does that little girl know - she is about to get replaced - and her daddy is gonna have a new little queen. :)

Hey Look! It's a Habitat!

When I saw my belly this morning - I immediately recalled one of my favorite family memories.

While on vacation as a family - we all went to the zoo. During this particular zoo visit - we were ALL so very excited (EVERYONE in our family is an animal lover) - each of us would run to the next exhibit and say - Look, its a ___________! (insert strange "scientific" animal name here.)

My dad, bless his heart, ran up to a cage and said "Hey, Look! It's a Habitat!" Now, this might not be so funny to most - but needless to say, to those of us who noticed that EVERY cage had a sign that read "Habitat" and then described the living conditions for the animal that particular cage was housing......and for dad to see the word "Habitat" and think that was the "strange scientific" name of the animal he was looking at - which I can't even remember what it really was - struck the rest of us as hilarious. He was so dead serious about it. And while he has NEVER lived this down, and I am sure never will - it has provided many a laugh for us at family functions. And he is such a good sport, he can take it for the team - even though, I am SURE, if you ask him - he knew it all along - he was just trying to be funny.

Anyway - when I saw my belly this morning, in the 29th week - holy cow - is that right??! - I immediately thought - wow, now THAT is a habitat! I am currently housing the sweetest little lamb on the planet - and her habitat's conditions are hot, hot, and very hot, with a side of hormones and hot-ness. And YES - I mean temperature. For someone who is NEVER warm - ALWAYS freezing - and ALWAYS sleeping under 5468764131 blankets just to snuggle -- to kick the A/C down to under 70 and still kick the covers off...it is just a furnace in her little habitat! Crazy!

Needless to say, dad got a little laugh this morning when I sent him this picture - with the caption. "Hey Look! It's a Habitat!"

Hello, Perfect Dresser.

I found her.

The perfect one.

The dresser I have been ever so dilligently searching for.

And I am in love - I love old things.


We have also decided not to paint her. She is white - while the crib is creme and the bookcase is somewhere in between. We are going to go with it. I mean - I don't like matchy-matchy anyway. Plus this is one less project.

Besides - she is perfect, remember?
